Ingredients for Vada Pav:

  • 2 tbsp oil
  • 1/4 tsp asafoetida (hing)
  • 1 tsp mustard seeds
  • 2 tsp fennel seeds (saunf)
  • 1 onion
  • 2 tsp green chili-ginger paste
  • 2 potatoes
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 2 tsp red chili powder
  • 2 tsp chopped cilantro (coriander leaves)
  • 2 tsp lemon juice

Ingredients for Masala Paste:

  • 9 garlic cloves
  • 5 dried red chilies
  • 2 tsp white sesame seeds
  • 1 cup grated coconut
  • 1 tsp salt
  • 1/2 tsp red chili powder
  • 1/2 tsp tamarind paste
  • 1 cup chickpea flour (besan)
  • 1/4 cup baking soda
  • 1 tsp salt
  • 1 tsp red chili powder
  • 4 green chilies

Vada Pav Preparation: For Potato Fritters (Vada):

  1. Heat oil in a pan, add asafoetida, mustard seeds, and fennel seeds. Roast them together.
  2. Add chopped onions and green chili-ginger paste. Sauté until the onions turn golden.
  3. Mix in boiled and mashed potatoes, turmeric powder, salt, red chili powder, and chopped cilantro.
  4. Combine well and add lemon juice. Cook until it forms a paste-like consistency.

For Masala Paste:

  1. Heat a bit of oil in a pan and add garlic, dried red chilies, white sesame seeds, and grated coconut.
  2. Mix well and add roasted peanuts. Add half a tablespoon of salt and red chili powder. Blend to form a paste.
  3. Add tamarind paste and mix all the ingredients to form a smooth paste.
  4. In a bowl, mix chickpea flour, baking soda, salt, and red chili powder. Add a bit of water to make a batter.
  5. Take a portion of the prepared masala paste and form small balls.
  6. Dip the balls into the chickpea flour batter and deep fry them until golden brown.
  7. You can also pan-fry some green chilies for extra flavor.
  8. Take the buns and spread green chutney and masala paste on them. Place a fried fritter between the buns.
  9. Serve Vada Pav with green chili chutney.

Tips:

  1. To make the fritters crispier, you can add 2 tablespoons of rice flour to the chickpea flour batter.
  2. Baking soda is used to make the fritters crispy.
